Protein Cheesecake Mousse (Kellie Kallas- Director of Fitness)
Recipe from Carter Fitness Cookbook; Kellie uses Beverly Protein Powder, sold at BR&F.

Place everything in a food processor and blend/mix for about 2-3 minutes, or until cottage cheese reaches an airy mousse-like consistency. Serve immediately, or chill in the fridge in a covered container!

1/2 cup low fat cottage cheese
1/2 scoop protein powder of choice (1/8th cup)
1 tbsp. unsweetened cocoa powder
2-4 pkts Stevia (or sweetener of choice to taste)
Optional: 1 tbsp. instant sugar free chocolate pudding mix
